The Sonoran Dog

 

Ingredients

Serves: 6

  • Forbes Meat Company porchetta sausage

  • 1 head of green cabbage

  • 4-5 fresh bulbs of garlic

  • 1 yellow onion

  • 1 bunch cilantro

  • 3 limes

  • 1 jalapeno

  • Fresh radish

  • 3 avocado

  • Choose your favorite bun: 6 english muffin/ hotdog roll/sourdough birote

  • Veganaise

  • Desert Provisions sea salt

  • Extra virgin olive oil (EVOO)

Prep

  • Place your Forbes Meat Company sausage or alternative out to thaw to room temp. This allows for even cooking while on the stovetop.

  • Time to prep your roasted garlic! It’s a great add to this dish, providing at least 1 bulb per person for optimal flavor.

    • Remove the first couple layers of skin from the garlic bulb & with a sharp knife, slice the top of each clove, exposing the raw garlic inside the bulb itself.

    • Place the bulb into a medium sized square of tin foil. Add your Desert Provisions sea salt, Mexican oregano & EVOO. Wrap in tin foil & place into the oven at 420 degrees for 30 minutes -OR- until you can smell the beautiful fragrance of roasty garlic.

  • Reorganize your work space & begin prep for your onion salsa.

    • Using a food processor, place your yellow onion inside & pulse until finally chopped. Remove with a plastic
